From Allentown to Baltimore: A Journey Begins

Born in Allentown, Pennsylvania, Michael Bokosky’s culinary story began long before he donned the chef’s whites. Growing up in a family with three brothers and a sister, his first encounter with the kitchen came at the age of 15 when he started working in restaurants. However, it wasn’t until his uncle, an English professor and guidance counselor living in California, introduced him to the world of culinary arts that Michael’s path became clear. This influential figure not only shared his love for cooking but also guided Michael to the realization that culinary schools existed, a revelation that would shape his future.

At the age of 20, Michael enrolled in the Baltimore Culinary College, a pivotal decision that would set the stage for his illustrious career. His early years in culinary school were marked by unique opportunities, including working at a jazz supper club where he cooked for some of the greatest jazz musicians and even for the cast of Joel Grey’s “Cabaret.” These experiences not only honed his skills but also deepened his appreciation for the artistry of food and music.

A Culinary Maestro with a Vision

Over the next four decades, Chef Michael’s career flourished as he worked in hotels, fine dining establishments, and Business and Industry (B&I) dining. His expertise spans the spectrum of culinary operations, from the heart of the house to tableside service. His ability to lead and develop teams, coupled with his passion for creating exceptional dining experiences, has made him a sought-after leader in the industry.

One of Chef Michael’s most memorable moments was crafting a traditional Cuban meal for a resident’s 100th birthday celebration at Grand Living. With the help of the resident’s family, he meticulously prepared a feast that honored tradition while celebrating a century of life. This event exemplifies Chef Michael’s dedication to creating personalized and meaningful culinary experiences.

When Chef Michael joined Grand Living, he knew he was embarking on something special. Having known Dan (Peterka) and Mel (Seifert), the founders of Grand Living, long before the senior living company was established, Chef Michael was confident in their vision and their hearts.
